Country-Style Beef Ribs with Peppers and Onions

Coat 3- to 4-quart slow cooker with cooking spray. Place ribs in slow cooker; top with onion. In small bowl, stir together gravy, soy sauce and black pepper; pour over ribs and onion. Cover; cook on LOW setting 8 to 9 hours or until ribs are tender.
Add stir-fry vegetables to slow cooker; cover. Cook on HIGH setting 10 minutes or until heated through.
Serve ribs, vegetables and sauce with hot rice.
