Prime Rib Roast with Oven-Browned Potatoes
Buy Sutton & Dodge® Bone-In Ribeye Roast.
Heat oven to 350°F. Cut potatoes into 1 1/2-inch pieces. In large pot of boiling salted water, boil potatoes until fork-tender; drain.
Rub entire surface of roast with salt and pepper. In 12 1/2-x10 1/2-x2-inch roasting pan, place roast fat-side-up (bone-side-down). Bake 1 1/2 hours or until internal temperature reaches 100°F.
Move roast to one side of pan; add potatoes to pan, turning to coat in drippings. Bake, stirring potatoes halfway through, 30 to 45 minutes or until fully cooked (165°F.).
