  • 1tablespoon light olive oil
  • 2cup sliced carrots
  • 1 onion, cut into 8 wedges
  • 1 (14.5-ounce) can diced tomatoes with green pepper, celery and onion
  • 1 (12-ounce) jar homestyle beef gravy
