Tenderloin with Peppered Bacon
Buy Sutton & Dodge® Tenderloin Roast.
Heat oven to 350°F. Coat medium roasting pan with cooking spray.
Trim roast with sharp knife by first cutting and pulling away external fat. Remove thin, fatty portion that is on one side of roast. Remove thin, bluish membrane underneath fat, angling knife away from meat so as not to cut into meat. Transfer roast to roasting pan.
Lay bacon slices over top of roast, overlapping and tucking ends underneath. Sprinkle with pepper.
Roast tenderloin 1 hour 45 minutes to 2 hours or until fully cooked (165°F). Cover with aluminum foil; let stand 5 minutes before cutting.
Serve tenderloin with mashed sweet potatoes sprinkled with toasted pecans.
