Spicy Chipotle Ranch Quesadilla
Buy Sutton & Dodge® Flank Steaks.
Heat grill to MEDIUM-HIGH. Combine oil, sugar, garlic salt, oregano and cumin in small bowl. Rub evenly onto steaks.
Grill until rub is slightly charred, 5 to 7 minutes. Turn over and grill 5 to 7 minutes longer until fully cooked.
Transfer steaks to a cutting board. Let stand 5 minutes before thinly slicing against the grain and cutting into bite-size pieces.
To create a chipotle ranch sauce, mix 1/2 cup ranch dressing, 1 tablespoon chopped chipotle en adobo sauce and 1 clove minced garlic.
Spread the chipotle ranch sauce on half of each tortilla. Sprinke each with 1/2 cup shredded Mexican-style cheese and top with cut grilled steak. Fold untopped half over filling.
Grill 3 minutes, turning half way through, until cheese is melted. Cut in wedges and serve with salsa.
