Buy Sutton & Dodge® Bone-In Strip Steak.
Make butter at least 3 hours in advance. Combine all butter ingredients (not including steak, oil, salt & black pepper) in medium bowl.
Spoon onto a 10-inch piece of plastic wrap. Roll butter in plastic wrap and smooth out to form a 4-inch log. Refrigerate until firm; slice into rounds.
Heat broiler. Arrange on broiling pan. Brush both sides of steaks with oil and season with salt and pepper. Adjust oven rack so tops of steaks are 4 to 6 inches from heat. Broil 10 minutes; turn steaks over. Broil 6 to 8 minutes longer until fully cooked.
To serve, place steaks on plates and top with rounds of bourbon butter. Allow to rest 5 minutes before serving.
