Melt 2 Tbsp. butter in a large nonstick skillet on MEDIUM; add potatoes, salt and pepper. Cook until golden, 12 to 15 minutes, stirring occasionally.
Add mushrooms. Continue to cook until mushrooms are tender, about 8 minutes. Stir in spinach and cook until wilted, about 1 minute. Stir in cheese. Remove from pan; cover to keep warm.
Heat remaining butter in skillet. Add steak; season with salt and pepper to taste. Cook on MEDIUM-HIGH 8 to 10 minutes, stirring occasionally, until cooked through.
To serve, place potato hash in the center of each of 4 plates. Top with steak and a fried egg.
